You only need three ingredients for this healthy pancake recipe. Since there is no sugar, eggs and milk, this breakfast alternative is not only really healthy, but also vegan.
For the pancakes you need 1 overripe large banana, 80 grams of regular oat flakes and 160 ml of unsweetened, plant-based milk of your choice.
The oat curls have a high content of vegetable protein and fiber. This will keep you full for a long time, even though a pancake only contains around 55 kcal per piece.
Banana pancakes: this is how you make them
- The first step is to mix the oat flakes in a blender until they have the consistency of flour. Alternatively, this step can also be done with a hand blender.
- Then you have to add the remaining ingredients and mix everything into a dough. If it is too thick, you can simply add more milk. Tip: The pancakes are particularly tasty if you let the dough rise for 10 minutes at room temperature.
- Then heat a pan with some coconut oil or (vegan) butter. About three tablespoons of the batter make one pancake.
- After two to three minutes or when the pancake is golden brown, turn it over and let it sizzle again for a few minutes.
Banana pancakes: toppings and alternatives
Of course, you can adjust the dough according to your preferences. Instead of oat flakes, you can also use traditional flour.
To give the pancakes that certain something, cinnamon, vanilla extract or chocolate chips are suitable. Add a teaspoon of baking powder to make the pancakes fluffier.
