Common mistake: What not to do when eating sushi

The rice grains swim in the soy sauce, you eat the ginger at the same time as the maki and you bite off the morsels? Often, both beginners and die-hard sushi lovers make some mistakes. And that can diminish the enjoyment experience.

Caution: Never dip sushi completely into soy sauce

One of the most common mistakes when eating sushi is mishandling soy sauce. Many people dip the sushi directly into the soy sauce. However, this causes the sauce to overwhelm the delicate structure of the fish or rice.

The rice is very absorbent and you often get too much – the balance of flavors is destroyed and the sushi tastes far too salty. This is particularly problematic with nigiri (sushi with rice and fish) because the taste of the fish is lost.

The correct technique is to lightly dip only the side of the fish – not the rice – into the soy sauce. This preserves the flavor of the sushi and prevents the rice from soaking up too much sauce and falling apart.

Other mistakes to avoid when eating sushi

Bite off

The maki and the nigiri sushi should be consumed in one bite. If you don’t want your plate to be empty too quickly, you should wait between each piece.

Place the chopsticks on the table

The rod should never be put on the table. Upscale sushi bars usually have chopstick holders on every table. And if that’s not the case, you can simply use the paper in which the sticks were wrapped to make a stick holder yourself. You should never put the chopsticks in food. Because this is reminiscent of a tradition that is used at holy ceremonies or funerals.

Skewer the fish with the chopsticks

Even if it’s not that easy to eat the maki or nigiri with chopsticks: you should never skewer the fish with them! If you have problems with your chopsticks, you can also use your hands if necessary. Because that’s allowed even in an upscale sushi restaurant – except for sashimi. Chopsticks and hands are allowed – cutlery, however, is an absolute no-go.

Rub chopsticks together

The sticks should under no circumstances be rubbed together. Because in Japan that means that the quality of the chopsticks is poor. This is considered disrespectful.

Mix wasabi and soy sauce

Many people tend to mix wasabi and soy sauce. It’s better not to do that with the Japanese, because the two ingredients definitely don’t belong together. It’s best to put some wasabi on the sushi and then dip it into the sauce.

Eating sushi ginger properly

Sushi ginger is also called “Gari” in Japan. A culinary no-go is to put the ginger on the sushi and eat it together. Because of its spiciness, ginger serves as a taste neutralizer. It is not placed on the sushi, but eaten between the bites. The different tastes of the different sushi rolls can be better perceived this way.
