A spoonful of mustard makes fatty food more digestible. Mustard also has an anti-inflammatory effect and strengthens the immune system. It stimulates the appetite and aids digestion.
The Federal Center for Nutrition (BZfE) points this out. The seasoning paste can therefore help people with a sensitive stomach.
Mustard is healthy: why?
The healthy effect of Mustard is mainly due to its so-called mustard oil glycosides – such as the one called sinigrin in brown and black mustard.
White mustard, on the other hand, contains sinalbin, from which small amounts of a substance that can have a hormone-like effect can be formed during the paste production process. However, the amounts contained in commercially available mustard have been classified as unproblematic.
What’s in mustard
According to the BZfE, anyone who can tolerate mustard can eat it every day. In addition to the mustard oils, the paste also contains B vitamins and minerals such as magnesium, calcium and phosphorus.
Tip: Look at the ingredients list in the jar of mustard. The more mustard seeds it contains, the better. But anyone who is allergic to mustard should of course avoid it despite its positive effects.
